The secret of proper vinification begins, ironically, on the speed of movement.

The clusters, in fact, once you have reached their full maturity, they must get to the wineries in perfect condition and in the shortest possible time.

I do not have to heat up, staying in the sun too long.

For the grapes for the production of the whites, after de-stemming, the treatment begins with cold maceration, conduct and for twenty-four to forty-eight hours in some cases. Then the juice is drained white without any kind of pressing and fermented in tanks at a controlled temperature.

For the reds, however, prefers the traditional method of fermentation heat.
