DENOMINATION: I.g.t. Emilia Sauvignon fermo.

VINEYARD LOCATION: Vineyards of the Casatico Estate.

THE VINEYARD: Exposed to the west, the vineyard is situated at an altitude between 240 and 280 above SL. Density is 4000 plants per hectare. The soil is clayey and medium pebbly.

HARVESTING: The grapes are hand-picked in small boxes, the last week of August.

PRODUCTION: 6 MT of grapes per hectare (about 2.4 MT/acre).

VARIETAL: 100% Sauvignon R3.

WINEMAKING: 50% of the grapes are destemmed and the other 50% are left on the stems. The grapes are separately fed into press through a funnel under liquid nitrogen sublimation creating a vacuum; after 8 hours maceration for the destemmed grapes and 4 for the grapes on the stems, the grapes undergo first racking with a yield of 40%. The alcoholic fermen- tation lasts around 12 days.

AGEING: 8 months in stainless steel tank with regular lees stirring.

FOOD PAIRING: Pasta dishes with fish ragouts or grilled fish dishes.


  • Colour: straw yellow with greenish highlights.
  • Aroma: spicy. It exquisitely expresses the characteristics of the varietal; it is fruity with hints of banana and sage.
  • Flavour: strong but never aggressive.

PRODUCTION: Between a minimum of 3000 bottles and a maximum of 5000 depending on the vintage.
