DENOMINATION: Colli di Parma Malvasia D.o.c.frizzante.

VINEYARD LOCATION: Vineyards of the Casatico Estate.

THE VINEYARD: Exposed to the west The vineyard is situated at an altitude between 220 and 260 above SL. Density varies between 2800 and 4000 plants per hectare. The soil is clayey and medium pebbly.

HARVESTING: The grapes are hand-picked in small boxes, the first two weeks of September.

PRODUCTION: 8/10 MT of grapes per hectare (about 3.2/4.0 MT/acre).

VARIETAL: 100% Malvasia di Candia Aromatica. 3

WINEMAKING: The destemmed grapes are fed into a press through a funnel under liquid nitrogen su- blimation creating a vacuum; after 4 hours without any chemical assistance, the grapes undergo first racking with a grape/must yield of 35%. The alcoholic fermentation lasts around 15 days (temperature is maintained at a maximum of 18°C). The refermentation in sealed tank lasts at least days.

AGEING: 4/5 months in stainless steel tanks then one month in the bottle.

FOOD PAIRING: This is a dry and aromatic wine which excels in a range of combinations, from the tradi- tional cold meats of Parma to egg pasta dishes tossed in butter and Parmesan cheese. Wonderful when paired with raw oysters.
