DENOMINATION: Mosto parzialmente fermentato frizzante.

VINEYARD LOCATION: Vineyards of the Casatico Estate.

THE VINEYARD: Exposed to the west, the vineyard is situated at an altitude between 220 and 260 above SL, exposed to the west. Density is 4000 plants per hectare. The soil is clayey and medium pebbly.

HARVESTING: The grapes are hand-picked in small boxes during the first two weeks of September.

PRODUCTION: 8 MT of grapes per hectare (about 3.2 MT/acre).

GRAPE BLEND: 50% Malvasia di Candia Aromatica, 50% Moscato Petit Gran.

WINEMAKING: The grapes are destemmed and fed into a press through a funnel under liquid nitrogen sublimation creating a vacuum; after 4 hours without any chemical assistance, the grapes undergo first racking with a grape/must yield of 35%. The must is stocked in sealed tanks at a temperature of -2°C for 30 days. During the following period the temperature is allowed to rise naturally and fermentation takes place. When at 3/4 alcohol degrees with the secondary fermentation the wine is bottled.

AGEING: 2 months in stainless steel tanks then one month in the bottle.

FOOD PAIRING: Perfect with desserts, soft pastries or summer fruit cocktails.

PRODUCTION: Between a minimum of 7500 bottles and a maximum of 10000 depending on the vintage.
