DENOMINATION: bianco da tavola frizzante.

VINEYARD LOCATION: Vineyards of the Casatico Estate.

THE VINEYARD: Exposed to the west, the vineyard is situated at an altitude between 260 and 290 above SL,. Density varies between 2800 and 4000 plants per hectare. The soil is medium pebbly to clayey.

HARVESTING: The grapes are hand-picked in small boxes, the last week of August through to the first week of September. /p>

PRODUCTION: 6 MT of grapes per hectare (about 2.4 MT/acre).

GRAPE BLEND: 50% Chardonnay 50% Pinot Nero.

WINEMAKING: The intact grapes of the varietals are separately fed into press through a funnel under liquid nitrogen sublimation creating a vacuum; after 6 hours without any chemical assistance, the grapes undergo first racking with a grape/must yield of 40% for the Chardonnay and 30% for the Pinot Nero. The alcoholic fermentation lasts around 15 days (temperature is maintained at a maximum of 18°C) at the end of which period the wines are assembled. The refermentation in sealed tank lasts about 120 days.

AGEING: A minimum of 6 months in sealed tanks then two months in the bottle.

FOOD PAIRING: This wine is fresh and slightly herbaceous, excellent served as an aperitif as well as with any part of the meal, as half of it is derived from red grapes, which add precious points to the structure and body.


  • Colour: straw yellow with slight greenish highlights.
  • Aroma: elegant, persistent with a noticeable varietal character.
  • Flavour: dry and lean but not extreme, well balanced.

PRODUCTION: Between a minimum of 4000 bottles and a maximum of 6000 depending on the vintage.
